Optional Accessories for Floor Model fryers

for Belshaw 618L, 624, 634 electric fryers, 718L, 724, 734 gas fryers (CG and FG)

Frying Screens

Long-lasting, easy to clean, nickel plated screens in 3 standard sizes: 17" x 25", 23" x 23", and 23" x 33". Heat resistant handles bolt securely onto the screen. (Belshaw supplies two of these as standard equipment with each fryer).

Proofing Screens

These are frying screens without handles. When making yeast-raised product, these are for laying out the donuts, freshly cut from rolled dough, and inserting them into your proofer to rise. After proofing, transfer the screen into the donut fryer using either detachable handles or a screen cradle (as explained below). The number of screens you might need to start up is about 36 per floor model fryer.

Detachable handles

These are the same frying screens and handles as above but unbolted. When proofing (for raised donuts only) you use the screens without handles. When you transfer into and out of the fryer, you insert the handles into the wire mesh of the screen. As a rule of thumb, the number of screens you should start with is about 36 per floor model fryer.

Screen Cradle

"Where did those screen handles go, just when I need them?" The screen cradle is Belshaw's answer to the problem. It's as large as a screen itself, it stays by the fryer, and is very hard to lose even in a busy bakery environment! Plus, it transfers the screens in and out of the fryer just a little more easily than detachable handles. Often it comes down to individual preference whether you prefer Frying Sreens, Detachable handles, the Screen Cradle, or a combination of them all.

Submerger

A submerger is an extra screen that holds donuts (or other product) under the shortening in the fryer. A submerger is especially useful for donut 'balls' (cake donuts formed by a ball plunger) and 'holes' (raised donuts made from the center of a ring donut). Both of these will tend settle in one position and fry unevenly if left to themselves. You typically allow the donuts to shape naturally for a number of seconds, and then submerge them.

(The submerger shown at left is in the "up" position on a 624 electric fryer).

Shortening Filtration System

A Belshaw shortening filter makes easy work of filtering and recycling shortening. Choose between 2 models: the 'SF' models filter and recycle only. The 'EZMelt' models filter, recycle and melt shortening cubes. You can place a shortening cube up to 50 lbs / 23 kg onto the cube cutter (a honeycomb shaped aluminum frame) and it will quickly melt ready to fill up the fryer using a foot pedal. More about filtration systems.

Choose either an 'SF' or an 'EZMelt' model for your fryer, from the table below.

Cake Donut Depositor

Belshaw's electric powered Type F depositor (shown at left) makes it easy to spread your cake donuts quickly and accurately across your fryer. The trigger handle can be held down for continuous fast depositing, or pressed once for each donut. Other models available: Type B with hand crank operation, and Type F Deluxe.

Proofer

This mobile proofer is made for donut production! The EP-18/24 shown left has 6 doors, so you can pull screens out one by one without letting in a lot of air. With 17 shelves, it can proof up to 68 dozen proofed donuts per hour for 30 minutes each.

A wider version (EP-18/24/34) is available for handling the big screens used on 634 and 734 fryers, giving you up to 85 dozen/hour.

Icer

This is the H & I 2 icer, a 2-bowl water-warmed icer which keeps your icing in condition for a long time with mild heat.

(A 4-bowl icer is also available)

Glazer

This is the HG18 EZLift glazer. It makes glazing a full screen of donuts easy.

Standard models are available without the easylift mechanism. In 3 sizes to accomodate the 3 fryer sizes available*.

* HG34 is not available with Easylift. Standard models only.

Donut Finishing Center

An amazingly versatile table with extendable "wings", 7 bowls for storing icings and sprinkles (3 of which are heated), and storage space for 5 pans underneath.
